- 1 medium pepper (green, red, orange or yellow)
- 1 medium courgette, chopped
- 1 cup broccoli florets
- 1 medium onion, chopped
- 1 tablespoon olive oil
- Half a teaspoon 'Lazy Chillis' (available in supermarkets)
- 1 medium tin chopped tomatoes
Instructions
- Blacken the pepper under the grill to loosen the skin. Then peel and chop. (Use tinned or bottled ready-skinned peppers if you are in a hurry.)
- Steam the chopped courgette and broccoli florets for 3-5 minutes depending on preferred consistency.
- Quickly stir-fry the chopped onion in the olive oil.
- Add the other vegetables and the half teaspoonful of 'Lazy Chillis' and mix well.
- Add the tinned tomatoes and cook for a few minutes until the vegetables are beginning to soften.
- Serve with rice, pasta, baked potatoes, fish or chicken.
