Pineapple chicken breasts

Serves 4

Ingredients


Pineapple
  • 4 chicken breasts
  • 4 pineapple slices
  • Salt and pepper

Marinade

  • 2 tablespoons pineapple juice
  • 2 tablespoons dry sherry
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon grated ginger
  • 2 cloves crushed garlic

Instructions

  1. Preheat the grill or BBQ.
  2. Mix all the marinade ingredients together and put the chicken breasts in. Leave overnight (or for about 8 hours), turning as frequently as sensible.
  3. Remove the breastsfrom the marinade and wipe dry. Cook under the grill or on the BBQ, turning frequently. Grill the pineapple slices.
  4. Serve the chicken on the pineapple slices with a salad of rocket and watercress.

Sainsbury's Alsace Gewurztraminer 2000/2001
