- 4 chicken breasts
- 4 pineapple slices
- Salt and pepper
Marinade
- 2 tablespoons pineapple juice
- 2 tablespoons dry sherry
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 teaspoon grated ginger
- 2 cloves crushed garlic
Instructions
- Preheat the grill or BBQ.
- Mix all the marinade ingredients together and put the chicken breasts in. Leave overnight (or for about 8 hours), turning as frequently as sensible.
- Remove the breastsfrom the marinade and wipe dry. Cook under the grill or on the BBQ, turning frequently. Grill the pineapple slices.
- Serve the chicken on the pineapple slices with a salad of rocket and watercress.
