Cold peach pudding

Serves 3

Ingredients


Peach slices
  • 1 220ml carton peach flavour Ensure Plus
  • 1 small Madeira cake
  • 1 small tin peaches
  • 140ml/5floz double cream

Instructions

  1. Place a layer of Madeira cake on the bottom of a serving dish.
  2. Pour half the carton of Ensure Plus over the cake and arrange a layer of peaches on top.
  3. Repeat this to use up the remainder of the cake and peaches.
  4. Cover with double cream and refrigerate for 2 hours before serving.
