- 28g/1oz sugar
- 40g/1.5oz ground rice
- 560ml/20floz milk
- 2 very ripe medium mangoes
- Lemon juice to taste
Instructions
- Place the sugar, ground rice and milk in a heavy saucepan and simmer for 20-30 minutes, stirring occasionally. Allow to cool.
- Peel the mangoes and put about a quarter of the flesh to one side.
- Puree the remaining fruit and stir into the rice cream. Add lemon juice to taste (optional).
- Chop the reserved fruit and add to the fruit cream.
- Pour into a dish and chill well before serving.
Note: Equivalent quantities of alternative fruits may be substituted for the mangoes.
