Creamy mango rice

Serves 4

Ingredients


Mango
  • 28g/1oz sugar
  • 40g/1.5oz ground rice
  • 560ml/20floz milk
  • 2 very ripe medium mangoes
  • Lemon juice to taste

Instructions

  1. Place the sugar, ground rice and milk in a heavy saucepan and simmer for 20-30 minutes, stirring occasionally. Allow to cool.
  2. Peel the mangoes and put about a quarter of the flesh to one side.
  3. Puree the remaining fruit and stir into the rice cream. Add lemon juice to taste (optional).
  4. Chop the reserved fruit and add to the fruit cream.
  5. Pour into a dish and chill well before serving.

Note: Equivalent quantities of alternative fruits may be substituted for the mangoes.
