Fruity couscous

Serves 4

Ingredients


Couscous
  • 225g/8oz couscous
  • 560ml/20floz hot milk
  • 225g/8oz no soak dried fruit (prunes, apricots, dates, cranberries etc.)
  • 115g/4oz chopped nuts
  • 280ml/10floz plain yoghurt
  • Honey

Instructions

  1. Soak the couscous in the hot milk.
  2. Roughly chop the fruit and mix into the couscous.
  3. Add the nuts and mix well.
  4. Serve with honey and plain yoghurt.

Note: This makes an excellent breakfast dish or dessert.
