- 55g/2oz short grain rice
- 420ml/15floz milk
- 140ml/5floz double cream
- 55g/2oz unrefined caster sugar
- 1 vanilla pod
- 28g/1oz butter
- Grated nutmeg
- Strawberry jam (to serve)
Instructions
- Put the rice, milk and cream into a thick bottomed pan.
- Bring to the boil, stirring all the time.
- Add the seeds from the vanilla pod and the vanilla pod itself.
- Simmer until cooked, stirring regularly, approx. 45-50 minutes.
- Add butter and nutmeg.
- Pour into a dish and place under a grill until golden brown on top.
- Serve with strawberry jam.
