Rice pudding

Serves 4

Ingredients


Bowl of rice pudding
  • 55g/2oz short grain rice
  • 420ml/15floz milk
  • 140ml/5floz double cream
  • 55g/2oz unrefined caster sugar
  • 1 vanilla pod
  • 28g/1oz butter
  • Grated nutmeg
  • Strawberry jam (to serve)

Instructions

  1. Put the rice, milk and cream into a thick bottomed pan.
  2. Bring to the boil, stirring all the time.
  3. Add the seeds from the vanilla pod and the vanilla pod itself.
  4. Simmer until cooked, stirring regularly, approx. 45-50 minutes.
  5. Add butter and nutmeg.
  6. Pour into a dish and place under a grill until golden brown on top.
  7. Serve with strawberry jam.
